What are Funeral Potatoes made of?

Funeral Potatoes are made by mixing all of the popular comfort foods together. Such as potatoes, cheese, sour cream, and even cereal. Yes, you heard me correctly, cereal. Corn Flakes to be exact and let me tell you, the corn flakes are what absolutely makes this dish. There is something about the crunch of adding these buttery corn flakes to the top that makes this potato casserole irresistible.

What kind of Potatoes to use for Funeral Potatoes?

The potato options are endless for making potato casserole. You can use fresh potatoes, and chop or grate them yourself, but you know I love a good easy hack. The best potatoes for casseroles are in the freezer section. You can use the shredded hashbrowns, or the diced frozen potatoes. I would say the main difference in the diced potatoes verses the shredded hashbrowns is the shredded potatoes are in smaller pieces, so they tend to cook faster.

Topping Options for Potato Casserole

I personally love the corn flake topping for my potatoes. But if corn flakes are not for you, there are so many other options for topping potato casserole. You can use Ritz crackers, potato chips, cheese and bacon, or even French onions. The best part about casseroles is they are so flexible, and you can add whatever ingredients you and your family loves.

Cheesy Funeral Potatoes

Easy Cheesy Funeral Potatoes

Ingredients

  • 2-3 cups Frozen Hashbrowns (Diced or Shredded)
  • 1 can Cream of Chicken Soup
  • 1/3 cup Sour Cream
  • 1/2 cup Shredded Cheese
  • 1 tbsp Dried Minced Onion (Optional)
  • 2 tbsp Butter
  • 1/2 cup Corn Flakes

Instructions

  • Preheat oven to 350 degrees
  • You can mix the casserole ingredients in a separate bowl, and then add to casserole dish, but I like to mix right in the dish to save on clean up.
  • In small glass bowl melt butter, then add half of the butter to bottom of small casserole dish (8×8).
  • Add hashbrowns, cream of chicken, sour cream, minced onion, and cheese to casserole dish and mix well. Then use a spoon to smooth out mixture in dish.
  • Make sure to clean the edges of the casserole dish with a towel.
  • Crumble corn flakes on top of casserole, and drizzle with remaining melted butter.
  • Pop into the oven for 30 minutes or until potatoes are tender, and cornflakes are golden.
  • You can double this recipe for a crowd.
