Easy Chicken BBQ Baked Potato

This BBQ Baked Potato made with chicken has all the flavor, and gooey sauce, without the hassle of a grill. The best part is you can make it in the crock pot, and your family is sure to love it. Now, I am the queen of BBQ. I even had it at my wedding. Classy…I know, but I think that makes me extra qualified. My husband and I love to use boneless skinless chicken thighs. They are so tender, and juicy.

If you have not tried them, trust me, they are a game changer. I am picky when it comes to chicken, and I choose them over breast meat. We typically use chicken thighs or chicken breasts interchangeably for this recipe.

BBQ Baked Potato Ingredients

The five ingredients you will need are granulated garlic, Worcestershire sauce, Kraft Original BBQ Sauce, Salt, and Pepper. You can use your favorite BBQ sauce. Kraft just happens to be mine. Now, all that is left to do is pop your chicken in the crock pot, and cover both sides with all the ingredients. Easy enough, right?

But wait, it gets easier… I recommend using a crock pot liner to make for easy clean up. Then when your done eating you can just pull out the liner and throw it away.

Is it better to cook chicken on high or low in slow cooker?

Your chicken will likely be more tender if you cook it on low. I do cook my chicken on high from time to time, if I am in a rush. The best part of cooking in a crock pot is that you can get a tender bite every time, no matter what the temperature. But cooking chicken low and slow will ensure your meat is super tender.

I’m sure you could also pop your potatoes in the crock pot as well, but my favorite way to cook them is in the microwave until tender. Then comes the best part… cover your potatoes in your favorite oil and sprinkle them with flaky salt and pop them in the air fryer for a bit to get all golden. Sooo good.

Easy BBQ Baked Potato Recipe

  • 4 Boneless Skinless Chicken Breasts or Thighs
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 2 tsp Worcestershire Sauce
  • 1-2 cups Kraft Original BBQ Sauce
  • 4 Large Baking Potatoes
  • 1 Stick Butter
  • 2 Tablespoons Oil
  • 1 Cup Shredded Cheese (Optional)
  1. Add Chicken to Crock Pot.
  2. Coat chicken with 1/2 tsp Salt, 1/2 tsp Pepper, 1/2 tsp Garlic Powder, 2 tsp Worcestershire Sauce, 1-2 cups Kraft Original BBQ Sauce, make sure to flip chicken and get both sides covered
  3. Cook on low for 2-4 hours, or until cooked through. Add 1/4 cup water if chicken looks dry.
  4. Use a fork to shred chicken.
  5. Bake 4 Large Potatoes in the Microwave for 10 minutes or until fork tender.
  6. Drizzle Potatoes with your favorite oil, and sprinkle with salt on all sides. Bonus points if you have flaky salt.
  7. Put potatoes in the air fryer and cook at 425 degrees for 5-10 minutes or until potatoes start to get golden on the outside.
  8. Slice open potatoes and add your desired amount of butter, salt and pepper.
  9. Top with a big spoonful of shredded BBQ Chicken.
  10. This step is optional, but you can top with shredded cheese and pop back in the air fryer until the cheese gets golden and melty.
  11. Lastly I like to drizzle with a little extra BBQ Sauce. Enjoy!
