Cream butter and sugar with hand mixer approximately 2 minutes
Add in egg and vanilla and mix another 30-60 seconds
Mix flour and baking soda in a separate bowl
With your hand mixer on low speed speed, slowly add in flour and baking soda mixture
Mix until all ingredients are well incorporated and your dough starts to form a ball
Roll the dough into 1 1/2 inch balls
Roll the dough balls in sugar (Optional)**
Pop them into the freezer for at least 30 minutes to harden
Cook dough on a cookie sheet 2 inches apart for 10 minutes at 350 degrees
Pull cookies out of the oven to cook an additional 5-10 minutes while still on hot cookie sheet
