I have been craving Sugar Cookies and set out to make a cookie with the perfect texture. If you are looking for a cookie with a chewy center and crispy edges these are the ones for you.

Sugar Cookies

After much trial and error, I settled on a Sugar Cookie recipe suitable for my husband’s picky taste buds. These cookies have just the right amount of chew, and are not at all cakey. I found going with baking soda over baking powder really made the difference.

I roll my dough balls into some granulated sugar to give them a little extra something, but these are also just as good cooked plain. If you are feeling extra festive you could add red and green sprinkles for Christmas. These would be such a sweet treat for any holiday by easily adjusting your sprinkle colors.

I wanted a recipe that did not make a huge amount so I wouldn’t be tempted to eat them all at once. This recipe makes 20 good size cookies, but you could easily double or triple the recipe for a crowd.

I cooked a portion of this batch and saved the rest in the freezer in a zip lock bag. I think they are even better after the dough sets for a couple of days. Plus, you can keep them in your freezer year round and pull out a couple when you are craving something sweet.

Easy Sugar Cookie Recipe

Ingredients

  • 1 stick Butter (room temperature)
  • 3/4 cup Sugar
  • 11/4 Cup Flour
  • 1 Egg
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 2 tbsp Sugar (optional* for coating)

Instructions

  • Cream butter and sugar with hand mixer approximately 2 minutes
  • Add in egg and vanilla and mix another 30-60 seconds
  • Mix flour and baking soda in a separate bowl
  • With your hand mixer on low speed speed, slowly add in flour and baking soda mixture
  • Mix until all ingredients are well incorporated and your dough starts to form a ball
  • Roll the dough into 1 1/2 inch balls
  • Roll the dough balls in sugar (Optional)**
  • Pop them into the freezer for at least 30 minutes to harden
  • Cook dough on a cookie sheet 2 inches apart for 10 minutes at 350 degrees
  • Pull cookies out of the oven to cook an additional 5-10 minutes while still on hot cookie sheet
