Classic Chicken Salad is called a classic for a reason. It has stood the test of time and is great to make for so many occasions. It is one of those staple dishes that is really good any time of the year. I love to have it on hand for lunch or a quick snack. The best part of Chicken Salad is there are so many options and ways to make the recipe even easier. You can always prep your own chicken, and I love to make chicken salad out of my Lemon Pepper Chicken. But if you are in a pinch, you can use canned chicken, rotisserie chicken, or any kind of leftover chicken you have.

Speaking of leftovers, I made my last batch of chicken salad out of leftover KFC chicken. I just removed the skin and used the meat from the thighs and breasts we had left. Let me tell you, it was delicious. My favorite part of cooking is thinking outside the box and making the most out of every ingredient.

What makes Chicken Salad “Classic”

In my opinion, the “Classic” part of is all about using those age-old ingredients. I love making chicken salad like my grandma used to make. Don’t get me wrong, I like to spice it up from time to time but sometimes you just want, well for lack of better words…a classic chicken salad.

For my Classic Chicken Salad, I add celery, onion, dill pickles or relish, mayo, and you can’t forget the eggs. I also like to add a little mustard, but I know that is a controversial item. If you like mustard though, I highly recommend you give it a shot. The best part of is, if you don’t like something, just don’t add it.

Best Ways to Eat Chicken Salad

There are so many ways to eat chicken salad. Some of my favorites are on crackers, or a good piece of wheat toast. You can also top a fresh salad mix or greens with a spoonful, or just eat it in a bowl by itself. It really is so versatile. This is why i love to make a big batch and repurpose it in so many different ways.

I know what you have been waiting for… the hack. Well I am about to spill the beans on how I make this recipe even easier. The best way I have found to make chicken salad is to use a food processer. You can add in all your ingredients and saves you the mess of using a cutting board. It also saves so much time on prepping all the ingredients. This food processor hack is a real game changer.

I have a small food processor that also comes with several other attachments. I use this thing all the time. From making cheese balls to tacos, it does all the hard work for me.

Classic Chicken Salad

The Best Quick and Easy Chicken Salad

Course: Salad, Side Dish, Snack

Servings: 4

Ingredients

  • 3-4 cups Chicken (Shredded) You can use white or dark meat
  • 1 stalk Celery
  • 2-3 tbsp Dill Pickles or Relish
  • 1-2 tbsp Onion
  • 2-4 tbsp Mayo or Miracle Whip
  • 4 Boiled Eggs
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Using a food processor add in pickles, onion, and celery.
  • Pulse until finely chopped (You can also chop these by hand)
  • Add in chicken and mayo to food processor and pulse until blended
  • Peel and chop eggs, and stir into chicken salad
  • Add salt and pepper to taste
  • Refridgerate until cold and Enjoy!
