Mini Raspberry Cookie Tart Recipe
Easy Mini Raspberry Cookie Tart made with Sugar Cookie Dough
- 1 roll Sugar Cookie Dough
- 1 1/2 cups Raspberries
- 1 cup Powdered Sugar
- 1 block Cream Cheese
- 1 tub Cool Whip
- Preheat oven to 350 degrees.
- Cut cookie dough into 20-24 evenly sized pieces (Make sure to keep dough cold).
- Press each dough piece into a muffin tin and press your thumb in the middle to create a cup for your toppings.
- Bake cookie dough for 8 minutes or until just under done. They will continue to cook when you take them out of the oven.
- Whip room temperature cream cheese with powdered sugar until creamy.
- Fold cool whip into cream cheese mixture.
- Once cookie tarts are completely cooled, gently remove from muffin tin add a spoonful of whipped topping to each.
- Top with your favorite fruit and Enjoy!
- *Tip: These can be stored overnight in the fridge. Leave fruit off until serving.
