Easy Strawberry Shortcake

Strawberry Shortcake is the perfect sweet treat for Spring and Summer. This quick and easy semi-homemade recipe uses pie crust as the base, and it is my all time favorite way to make Strawberry Shortcake.

Strawberry Shortcake Game Changer

Our strawberry patch has really taken off this year. Which means I am making all the strawberry treats, and loving every minute of it. Growing up, my family always had sponge cake with strawberries on top, but the pie crust is definitely a game changer for strawberry shortcake.

Of course, I take short cuts when I can so I like to use ready to bake pie crusts, but you can also make your own. I just pop my crusts in the oven, and bake until they are golden brown. Then I break them up and use them as my first layer.

Strawberry Shortcake Layers

Next, I mash up my strawberries with sugar, making sure to get all the yummy juice out of them. This will be the second layer of the recipe. And then top with a dollop of Cool Whip. This is all you need for the perfect sweet treat, but I have one more thing you can add to really blow this recipe out of the water.

Grand Finale

For the Grand Finale, add a scoop, or two, of vanilla ice cream. I am telling you, this is one of the easiest desserts, but it tastes so amazing.

Quick and Easy Semi-Homemade Strawberry Shortcake

Ingredients

  • 1 Pie Crust (Premade Refrigerated)
  • 3-4 cups Strawberries
  • 1/2-3/4 cup Sugar
  • 1 small Cool Whip
  • 1/2 gallon Vanilla Ice Cream (Optional)

Instructions

  • Preheat Oven to 350 degrees and cook Pie Crust 15-20 minutes or until golden
  • Prep & Mash Strawberries with Sugar until juice forms
  • Crumble Pie Crust into 1-2 inch pieces
  • Add a dollop of Cool Whip on top of 5-6 pieces of crust
  • Top with strawberries and juice
  • For an extra special treat add a scoop of Vanilla Ice Cream
